We are no longer the proud "owners" of a three bedroom, two bath home. We closed on our house at 4:00 today and are now renting the home until the end of May. I'm very excited to have sold the house, but I'm also sad about letting go of our first home. I'm a bit emotional about it right now...just sentimental about all the memories here.
We feel very blessed to have had things work out the way they did. God provided in every possible way that we asked. We closed on our current house before the new house, which meant we didn't need a bridge loan. The new owner allowed us to rent the home back from him until I finished work in May. Way back in November, a family in Tupelo agreed to hold their home for us for six months so that we could sell our own home and have a place to move when Brad began residency. We feel very blessed and know that it is no coincidence that everything fell into place so perfectly!
So, now we pack. All the pictures and curtains are down in our "rental home." Everything looks so bare! We're going to start boxing up everything that is out and in the cabinets this weekend. It's so strange to see everything coming down. My mom said she might be able to come help this weekend, so we're hoping that she'll be here to lend a hand with all the packing.
Hope everyone is having a good week. We've been in the car constantly for the past month. It looks like things will be settling down now, so I'm looking forward to getting some things done around the house.
Oh, I almost forgot! I'll also post the recipe for broccoli bites that I told you about. I'm sorry that it's taken me so long to get this to you. Hope you like them as much as we did!
INGREDIENTS
* 1 tablespoon Creole mustard
* 2 tablespoons yellow mustard
* 4 tablespoons honey
* 2 cups broccoli florets
* 1 cup shredded Cheddar cheese
* 1 egg
* 3/4 cup milk
* 1/2 cup sifted all-purpose flour
* 1/2 teaspoon baking powder
* 1/2 teaspoon salt
* 1/2 teaspoon vegetable oil
* 1/2 cup vegetable oil for frying
DIRECTIONS
1. To make the sauce: In a small bowl, stir together the mustard and honey. Set aside.
2. Chop florets into small pieces or pulse lightly in food processor. Toss in a mixing bowl with shredded cheese. Set aside.
3. Beat egg and stir in the milk. Sift flour, baking powder, and salt together and combine them with the egg and milk mixture, beating well. Beat in 1/2 teaspoon oil as well. Pour mixture over broccoli and cheese and toss to coat well.
4. In a large skillet or saucepan heat oil to 375 degrees F.
5. Drop broccoli mixture by spoonfuls into oil and fry until golden brown. Serve with honey mustard sauce.

Congratulations!!!! I am so happy for you! It's such a relief to close, isn't it? But I totally understand the emotions and the "ugh" of packing up.... it will all be a distant memory in no time! Love you Ang!

Thanks for the recipe. We thought about selling our house in Feb but I couldn't bear to leave our first house, then having William do lots of firsts here. So I totally understand. Good luck with the packing!
